Valentine's Day Card

Pecan Pie

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1/3 cup butter or margarine
  • 1 TBS all purpose flour
  • 4 large eggs, slightly beaten and 1 egg yolk (brush egg white on pastry shell
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 unbaked 9 inch pastry shell
  • 1 1/4 cups pecan halves or coarsely chopped

Wisk together sugar and flour, add corn syrup and butter; heat in microwave until butter and sugar are melted.

Cool. Wisk in lightly beaten eggs, vanilla and salt. If using chopped pecans, add to mixture and pour mixture into pastry shell and top with pecan halves.

Bake at 325 degrees for 50-55 minutes or until set. Use foil or pie shield to prevent crust from buring. Yield: one 9 inch pie.

Rum Pecan Pie: Add 3 TBS of dark rum with vanilla extract.

Quick and Easy Apple Dumplings

  • 2 medium Granny Smith Apples
  • 1 (8 count) refrigerated cresent roll dough
  • Ground Cinnamon or Apple Pie Seasoning
  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup orange juice
  • 1 tsp vanilla extract
  • 1/2-1/4 cup of finely chopped pecans

Preheat oven to 350 degrees. Grease 8-inch square baking dish. Peel and core apples. Cut apples into fourths. Unroll and seperate crescent roll dough. Wrap each apple section in a crescent roll. Place in baking dish. Sprinkle with cinnamon or apple pie slice. Combine butter, sugar, and orange juice in microwave dish and microwave until boiling. Remove and stir in vanilla. Pour over dumplings and sprinkle with pecans. bake 30 minutes or until crust is golden and beginning to bubble. Apples should be fork tender. Serve, spooning syrup from dish over dumplings. Serve with ice cream if desired. Serves 8.

Pear and Goat Cheese Salad

  • 1/4 or 1/2 pecans
  • 3-4 cups choppen or torn salad greens
  • 4 Bartlet or Anjou pears
  • 2-6 ounces goat cheese or chevre
  • 2 TBS Balsamic Vinegar
  • 1 tsp sugar (optional)
  • 1 TBS olive oil

Dry roast pecans over medium heat for 1-5 minutes, stirring frequently. Finely chop. Arrange 1/2 cup salad greens on 8 plates or a platter and set aside. Cut pears in half lengthwise. With melon baler, remove seed and make a small, round cavity in each pear halt. Cut cheese into 8 pieces, shape into balls and rolls in pecans. Place one cheese/pecan ball in each pear cavity. Arrange pears on lettuce. Pour vinegar into small bowl; add sugar, whisking until dissolved. Add oil in a fine stream, whisking constantly until smooth. Drizzle evenly over pears. Sprinkle with remaining pecans.

Broccoli Soup  

  • 1 pkg broccoli
  • 1 can cream of mushroom soup
  • 1 1/2 cups half & half
  • 2 tsp butter
  • 1/2 tsp tarragon
  • Salt and Pepper to taste

Cook broccoli, drain, add other ingredients and heat. Add parmesan cheese for an extra layer of flavor.
