Lisa's Potato Casserole

1 bag small red potatoes (I get them at Harris Teeter)
1 large bottle Ranch Salad dressing
4 cups grated cheddar cheese (I use extra sharp)

Preheat oven to 375. Spray a 9x13 glass dish with PAM. Wash potatoes and cut into slices, about 1/4 of an inch. Line layer of potatoes, salt and pepper, ranch dressing and cheese. (when putting the ranch dressing on you don't have to cover the potatoes, just enough to cover the layer at least 3/4 of the way) Continue layering until you are at the top of the dish and cheese is on top. Cover with aluminum foil and bake for 1 hour 20 minutes. (Might take a little longer or a little less depending on your oven.)


Pine Bark

35-40 Saltine crackers
1 Stick butter
1 Cup Light brown sugar
1 Cup (More if you like) Chopped Pecans
8-10 Hershey Bars


Preheat oven to 350

Spray a cookie sheet with nonstick spray a place crackers salty side up. Fill the cookie sheet up so there are no gaps. In a saucepan melt butter and brown sugar, bring to a boil for 4 minutes stir it constantly. Pour mixture over top of crackers and bake for 5 minutes. (When crackers have been in the oven for about a minute or so pull them out and spread mixture so it is on each cracker.) While crackers are baking melt chocolate. Remove crackers from the oven and pour melted chocolate over them and spread out even. Sprinkle chopped pecans over chocolate. Place cookie sheet in the freezer for about 30 minutes so it can set up. After you take it out of the freezer break into pieces and serve.



Honey Bun Cake

1 box yellow cake mix
3/4 cup oil
4 eggs
1 stick butter-soft
8 oz sour cream


Filling
2 Tbs (plus a little) Cinnamon
1/2 Cup packed Brown sugar (plus a little)
Glaze
2 Cups confectioners sugar, maybe a little more
2 tsp vanilla
Enough milk to get a thin consistency


Mix 1st five ingredients together until creamy, pour 1/2 of batter in 9 x 13 greased Pyrex dish, mix filling together and sprinkle over cake batter, pour remaining cake batter over filling. You do not want any filling to show thru. Bake at 325 for 50 minutes or until light brown on top. As soon as you take the cake out of the oven poke holes in it with a toothpick all over the cake. Pour glaze over top of warm cake.


Peanut Butter Pie

1 cup sugar
1 cup smooth peanut butter
8 oz soft cream cheese
1 tsp vanilla
1 tbs soft butter
1 pint whipping cream
Graham cracker crust

Mix entire pint of whipping cream until it fluffs up, add a little sugar as you whip it. Set it aside. Mix sugar, peanut butter, cream cheese, vanilla, and butter, then fold in whipping cream to this mixture until thoroughly folded in. Spoon into pie crust. Refrigerate for a few hours before serving.



Lisa's Orange Glazed Tea Rolls

1 8 oz. pkg refrigerated crescent rolls
1 Tbls (plus) melted butter- it may take more than just 1 tbls
1/3 cup sugar
1/2 tsp ground cinnamon- you can use cinnamon sugar too

Orange Glaze:
2/3 sifted powder sugar
2 Tbls orange juice frozen concentrate-thawed undiluted
2 tsp water

Unroll dough onto lightly floured surface, press perforations together to seal. Brush with melted butter until the entire area in covered. Combine sugar and cinnamon and sprinkle over top of butter. Roll up jelly roll fashion. Starting at the end of the long roll cut into 1 inch slices. Place slices in lightly greased mini muffin pans, cut side down. Bake at 375 for 11-13 minutes. Remove immediately and drizzle with glaze.



Paprika Chicken

1 can mushroom soup
1 can water
1 8 oz carton sour cream
1/2 envelope Lipton onion soup mix

Mix ingredients together and pour over chicken that you have placed in a 9 x 13 dish. It is best to use chicken with the bone in it over boneless. Bake at 350 turning every 15 minutes or so, sprinkle with paprika each time you turn it. Gravy will turn pink. You can also add cheese and bread crumbs to this the last few minutes.



Squash Casserole

Cook squash and onions till tender, then drain. Mix together with the following:
1- 8 oz carton sour cream
1- can cream mushroom soup
1 1/2 cups grated sharp cheese

Pour into greased dish, cover with bread crumbs or crushed crackers and bake at 350 until bubbles



Greek Bread

1/2 cup softened butter
2 tablespoons mayonnaise
1 (2 1/2 oz) jar sliced mushrooms drained
1 (4 1/2 oz) sliced black olives drained
2 tablespoons chopped green onion tops- wash them good!!
1 16 oz loaf french bread-split
1 cup shredded mozzarella cheese

Combine 1st 5 ingredients. Slice bread half lengthwise. Spread bottom side with mixture, sprinkle with cheese, wrap in foil. Bake at 375 25-30 minutes



Pimento Cheese

Grate 1 block New York Extra Sharp Cheddar Cheese
Drain 1 medium jar pimentos and chop into small pieces
Add 3 tablespoons sugar
Mix well with Miracle Whip Salad dressing

Add Miracle Whip a little at the time, it doesn't take a lot. When I grate my cheese I use a grater that puts out little pieces, it is a round cylinder, hand grater. You should not use bag cheese, it will not give the same result a hand grated cheese.
